Recipe
This is our favourite salad at our house, and when I say favourite, I mean we eat it at least 3 times a week. I buy romaine lettuce, wash it, cut it and keep it ready in the fridge for this salad. It doesn’t contain a lot of ingredients and is very simple to make, but the sweetness of the oranges and the nuttiness of the pecans, blended with the slightly sweet dressing, is a perfect mix. I prefer this dressing made specifically with vegetable or canola oil. It makes enough dressing for a couple salads.
Romaine Salad with Oranges and Pecans
• 1 head of romaine lettuce or 2 romaine hearts
• ½ -1 can of mandarin oranges
• ¾ to 1 cup pecan halves
• 1 tsp salt
• ¼ tsp pepper
• 1 tsp dry mustard
• 1/3 cup apple cider vinegar
• 2 tbsp honey
• 1 cup vegetable or canola oil
Wash and prepare lettuce. In a small bowl, or a jar; mix salt, pepper and dry mustard. Stir in the vinegar and honey. Add the oil. Whisk or shake in a jar. Place salad, drained mandarin oranges and pecans in a large bowl. Pour some of the dressing over the salad and toss. Add as much or as little dressing as you like.
